Another option for people who generally like the Evernote format is Notejoy. It will feel very familiar to Evernote users. It is available on all major platforms. You can email notes into Notejoy. Organization can be done with nested tags and/or nested folders. It renders markdown well. While it is built for collaboration, Notejoy does have a solo plan for a reasonable $40 per year. There are some missing features. Task management is virtually non-existent and it doesn't do tables (yet). If the other options don't appeal, Notejoy is worth a look.
