Head to head on a Mac or an iPad, I would pick Ulysses. There are two advantages to iA Writer worth mentioning:

1. Ulysses keeps your writing in a proprietary format until you export (at least, I believe this is the case).

2. iA Writer has a Windows version, so if you're cross-platform it may be a better choice. Although the Windows and Mac versions are a bit different.
